Quinoa Salad!
So fresh!
One thing you will learn about me over time, is that I have a bit of a sweet potato obsession. I tend to add sweet potatoes to things that I really don’t have to, but they are just so so good!
This recipe does not have to have sweet potatoes in it (even though the picture may be misleading). I will make a blog post on how I roast my sweet potatoes, but for now, you must stay tuned for that one.
With all of that said, let’s get right into this recipe!
Ingredients:
1 Cup of Quinoa
1 Cucumber
1/2 Red Onion
Dill and Mint
Lemon/Olive Oil (for dressing) and salt!
Directions:
Boil water and add quinoa - cook for approx. 15 minutes (or refer/default to what the package says for cook time)
Let quinoa cool while prepping other ingredients
Add all ingredients to a bowl, add dressing, and mix!
Sweet potatoes are certainly not required for this recipe, but if you wish to add them, I PROMISE I will make a post all about sweet potatoes and how I roast them to perfection!
And there you have it! This salad is so hearty and is perfect for when the weather is beginning to warm up - this salad would also be KILLER alongside some grilled or roasted chicken for some added protein!
