”Chicken Pickin”!
Growing up, one of my mom’s go-to recipes was her classic “chicken pickin”. This dish was designed for when my mom was tired, and wanted to cook something simple, but delicious and healthy! Sure, picking up the phone and ordering a pizza might sound easier, but this recipe is not only super easy, it is also budget-friendly!
There are many ways to spice this recipe up, but sometimes the simpler it is, the better it is! I will outline some alternatives you can do to switch it up, but I’ll start with just the bare bones - let’s get into it!
Ingredients:
1 whole chicken
Olive oil
Salt
Lemon
Rosemary
Sweet potatoes
Recipe:
Preheat your oven to 425 degrees
Before you dirty your kitchen from your raw chicken, I recommend prepping out your sweet potatoes! Simply wash, cut into large wedges, and add to a roasting dish of choice
Add olive oil, salt, pepper, and any other herbs of choice (sometimes dressing it up with some garlic or onion powder adds a nice depth of flavor)
Prep your ingredients - mise en place is important in this recipe to ensure no cross-contamination
combine a generous amount of olive oil and salt to a ramekin
have your rosemary and lemon on standby
Prep your chicken (rinse your chicken under room temp water, and take giblets out)
Add chicken to the same roasting dish, and evenly coat with olive oil and salt (making sure the inside cavity of the chicken is properly salted as well)
Insert the lemon into the cavity of the chicken
Add rosemary to garnish and place the rest in the roasting dish to help with flavor
Cook chicken for approx. 1 hour and 15 minutes (time will need adjustment based on the size of the chicken) and keep checking until the internal temperature is at least 160 degrees (I recommend sticking the heat thermometer into the thickest part of the chicken avoiding any bones)
Let chicken rest for about 5-10 minutes before carving and serving!
