Chili!

You may be thinking, “Dang this girl puts sweet potatoes on everything” and honestly…yeah, you’re right - but, before you fault me for my addiction, you gotta give it a try!

Although chili is best in the colder months of the year, I will never say no to a good bowl! Also, I want to be super transparent on the front end because this may determine if you keep reading - beans belong in Chili. I apologize if this statement is shocking to some, and may even make you click away right about now, but TRUST - it makes it so much better!!

Here is the recipe!!

Ingredients:

  • Meat of choice (I recommend 1 pack of ground beef, or 1 pack of ground turkey for something a bit lighter)

  • 2 cans of diced tomatoes

  • 1 white onion

  • 2 peppers (either red, yellow, or orange to add a pop of color! If you want a bit of a kick, add a jalapeno as well.)

  • Mix of beans (1 can of black, 1 can of white, 1 can of kidney)

  • Spice mix (Chili powder, paprika, garlic powder, onion powder, S&P, and anything else your heart desires)

  • Olive oil

  • Approx. a cup of water (but it depends on how you like the consistency to be)

Directions:

  • Prep all of your ingredients

    • Chop up your onion, and peppers

    • Have your meat ready to pop into the pot

  • Heat your pot to medium-high heat

  • Coat the bottom with olive oil, and add your onions

  • Let the onions cook for approx. 2-3 minutes until they are clear

  • Add in your meat of choice and let it brown for approx. 5-10 minutes

  • Add in your spice mix and give it about 2 minutes to mix in with the meat and onions

  • Add in your chopped peppers, tomatoes, beans, and water

  • Once everything has been brought to a boil, bring down the heat to medium-low and let it simmer

  • Keep stirring every 15-20 minutes, and let it cook for as long as you can (the longer the better so flavors can come together)

I don’t always have this chili with sweet potatoes, but if I do, I usually roast them separately and then add them on top as a garnish of sorts. It also helps the chili last longer since the potatoes are so filling!

This chili can also be paired well with rice, or some sourdough on the side for an extra carb!
