Banana Pancakes!!

These pancakes are so fluffy, and delicious! You gotta try them!

One of my all-time favorite songs is Banana Pancakes by Jack Johnson. It perfectly encapsulates my ideal lazy Saturday - sleeping in, making banana pancakes, and having a perfectly legitimate excuse to stay inside (because it’s raining outside, obviously). Anyways, I digress. These banana pancakes make the perfect weekend breakfast—you have to try them!

I came up with this recipe one day when I was too lazy and hungry to make a loaf of banana bread. So, I made pancakes instead—and man, these pancakes surely do not disappoint!

One of my favorite things about pancakes is how forgiving they are. Unlike other bakes requiring expert precision, these pancakes are for those who desire more creative freedom (like me)!

Without further adieu, here is this recipe!

Ingredients:

  • 2 Ripe Bananas

  • 2 Large Eggs

  • 1/4 Cup of Honey (adjust based on how sweet you want it to be)

  • Approx. 1/4 Cup of Oat Flour (or flour of choice) - you can play around with the amount until it reaches your desired texture

  • 1/4 Cup of Water (sometimes I just do a splash and call it a day)

  • 1 Teaspoon of Vanilla Extract

  • A Pinch of Salt

  • As much cinnamon and nutmeg as your heart desires!

  • *You can totally add in chocolate chips, walnuts, or even another fruit to spice things up!

Directions:

  • Put your pan on medium heat, and add whatever oil or butter you want!

  • I usually measure each pancake out using a 1/3 cup measure (but it’s up to you how big or small you want your pancakes to be).

  • Cook pancakes as you normally would (until you see the little bubbles pop on top) - again, this is why I love how forgiving pancakes are!

  • This recipe usually makes enough for 2-4 people (depending on how hungry you are)!
