Healthy and moist Banana Bread Recipe!

Hey y’all! I know this post is “all things banana bread”, but I figured since it is my first time posting, I would quickly introduce myself! So, hi, my name is Ainslee, and I am quite literally a chefs daughter (or the daughter of two chefs to be exact). I grew up with a passion for food, which has only grown over the years. As a chefs daughter or a certified “foodie”, I have been ridiculously spoiled with the food I have eaten. Some may say that makes me a “food snob”, but it just means I truly care what I put into my body - and you should too!

As a recent college grad, life (as can be expected) has been a little crazy. I am in that space of really trying to figure out what I want to do, and how I can intersect my passions and career goals. So, for now, I figured I would use this as a creative outlet to share some of the things that I love!

Alright, now lets get into the part that y’all came for - the banana bread!

This banana bread recipe is one that I have really been trying to perfect for some time now. Oftentimes I will look for the healthiest version of a recipe, make it, and then try to convince myself it tastes good (when it honestly really doesn’t). But I absolutely, 100% promise you, this is not the case here.

This banana bread is not only good for you, but it is actually a 10/10 taste wise. It is fluffy, moist, and just the right amount of sweet!

So, what are the ingredients? I’m glad you asked:

Wet ingredients:

  • 2 ripe bananas (mashed)

  • 2 large eggs

  • 1/3 cup of melted coconut or olive oil

  • 1/4 cup of raw unfiltered honey

  • 1/4 cup of water

  • 1 teaspoon of vanilla

Dry ingredients:

  • 1 3/4 cups of oat flour

  • 1/2 cup of dark chocolate chips

  • 1/2 cup of walnuts

  • 1 teaspoon of baking soda

  • 1/2 teaspoon of salt

  • Eyeball cinnamon and nutmeg to your heart’s content!

Directions:

  • Preheat oven to 325 degrees

  • Combine wet ingredients

  • Combine dry ingredients

  • Combine wet and dry ingredients (fold in carefully)

  • Oil your loaf pan with whichever oil you prefer

  • Add mixture to loaf pan, and top either with a cinnamon swirl, chocolate chips, or chopped up walnuts!

  • Place in oven for approx. 55 minutes or until golden on the sides (always use a toothpick to test if it comes out clean)

  • Let it rest for a few minutes before slicing and serving!

This recipe is seriously so simple, delicious, and always makes my home smell so good! It is always a hit, and whenever I bring it places I always get asked for the recipe! Happy baking!
